It’s only a couple of days before Thanksgiving, and I can’t wait! Thanksgiving has always been my favorite holiday. I love turkey smothered in gravy, tart cranberry sauce, and second and third helpings of stuffing. Perhaps the only thing that I like better than the actual Thanksgiving dinner is raiding the refrigerator for leftovers around midnight, when my brother, sister and I usually compete with each other to create the best leftover combinations.

Last year I posted our recipe for Turkey Risotto with Butternut Squash and Creme Fraiche as a really delicious way to use up your turkey leftovers after Thanksgiving. But this year, we would love to to hear from you! We will be looking at everyone’s recipe ideas this weekend, and we’ll make our favorite, take pictures, and post about it next week!

Curried Turkey Salad. 2 cups chopped turkey (white meat) 1 pack of green onions chopped (just greens) 4 stalks celery chopped Mayonnaise to taste Curry powder about 1 - 1 1/2 teaspoons. Salt and Pepper to taste. Serve on croissants or on bib lettuce leaves.
